Abstract

• In many African countries traditional open sundrying is still a dominant practice during post-harvesthandling.
• Fluctuating weather conditions and contamination by insects and rodents are preeminent problems leading to quality deterioration and postharvestlosses.
• High mycotoxin contamination is often identified and related to an insufficient drying processes
• The application of an Inflatable Solar Dryer (ISD) for drying red beans has not been investigated to date.
