Description

The aim of the research and development cooperation project is the development of a holistic, technical system for the cultivation and processing of chia along the value chain. Chia seeds, due to their nutrient spectrum, are suitable for the production of functional, convenient foods. For use in this area, it is indispensable to prepare and fractionate chia seeds accordingly. For this purpose, a consortium has formed from the network "bioeconomy". As part of the project, Davert is developing an extraction system for the ingredients of Chia, and is conducting research and development of formulas for end products, including related process development. The University of Hohenheim characterizes different provenances of Chia within the project and develops an innovative production system to produce Chia under German conditions. Therefore, in the course of the research project, technical processes are developed that are, despite fluctuating raw material, processing qualities and grain properties, able to fractionate Chia seeds into flours, proteins and oils. On this basis corresponding end products are developed.
