Abstract

The influence of drying technique on moisture sorption properties of lemon balm (Melissa officinalis L.) leaves was investigated at temperatures of 25, 50 and 70 °C using the hygrometric method. The equilibrium moisture content of freeze dried leaves was significantly higher than that of vacuum dried and hot-air dried samples. The microstructure of the dried leaves was investigated by a scanning electron microscope
