Abstract

The objective of the study was to test the possibility of non-invasive laser backscattering for monitoring product quality parameters during drying of untreated apple slices. Samples were subjected to convective hot air drying at air temperatures of 60 and 70° C with air velocity of 0.9 m/s and 10 g/kg absolute humidity. Backscattering images of ten slices were acquired every 30 minutes over three hours of drying. The measurement setup included a 670 nm and 785 nm laser diode and a digital CCD camera used for capturing images. Backscattering area and light luminescence expressed by gray values were able to predict change in moisture content and yellowness during drying.
