Preface
7th international conference on water in food
This Conference continued the series of meetings of scientists
and manufacturers who are involved in the relation of water and
food. This is a very wide area with many aspects, spanning from
the determination of water content and water activity to the influence
of water on various properties of food and the adulteration of
products. The common interest has led to the creation of the association
EuroFoodWater located in Reims/France.
The previous meetings were held in Ispra/Italy in 2000, Reims/
France in 2002, Lausanne/Switzerland in 2004, Brussels/Belgium in
2006, Nürtingen/Germany in 2008 and Reims/France in 2010. The
8th International Conference on Water in Food will take place from
25 to 27 May 2014 in Timisoara/Romania. Information is contained

It has become a tradition that some of the papers presented at
these conferences are published in a special issue of Food Chemistry
(the first in Food Control):

The chosen Helsinki papers are presented in this issue.
