Effect of drying temperature and pre-treatment on color and textural changes during convective air drying of boletus edulis mushroom

Abstract

In the present work, color and texture of Boletus edulis mushrooms were evaluated during hot-air drying. The thin layer drying experiments were conducted in a laboratory dryer at temperatures of 50, 60 and 70 °C under various pre-treatments such as water blanching, steam blanching and immersion in aquatic solutions of potassium metabisulfite or citric acid. The results showed that during drying, lightness decreased while yellowness and redness increased. Sulfite pre-treatment could prevent darkening of the mushroom surface. Higher drying temperature and blanching caused intensive discoloration. Hardness increased as drying proceeded and was found to be greater at higher temperatures. Mushrooms subjected to blanching were harder in texture.
